It basically boils down to whether I am sensible or not - Do I be sensible and accept my old job back and just do a few weeks skiing in Canada or do I do a full season working as an instructor in Canada?

Canada is not the issue nor is going skiing its just for how long! :-D
Brimster, this is a no-brainer. Are you likely to get an opportunity like that again? Way back, when I was doing something a bit similar to you, was travelling roud the outback in a ford transit, with two pairs of skis strapped up to the van ceiling, and surrounded by kangeroos, emus and snakes. Plan was to drive/work our way around aussie, and end up with a season skiing. Then go to NewZealand buy a couple of horses, and ride down through the north and south island, before flying to the USA west coast, and crossing the USA by cheap ticket Greyhound. Due to illness, it didn't work out.
There are times when common sense applies, and you are not in one of those times. Make dreams, and follow them. You will easily get a job when you get back.
