AllyG, they are carving skis, so keep them carving (turning) all the time. A slight (tiny) edge set with both skis, will keep the edges engaged and the skis more stable.

I am quite surprised, I don't think they should chatter at the speeds Ally would be doing.

I wasn't going nearly as fast as the national and international racers, naturally. However, I was going reasonably fast because there was a nasty little hill you had to climb sideways to get to the chairlift, which was quite exhausting, and if I went fast enough I could get about half way up it. The racers could get nearly all the way up it (and in fact you had to be careful to keep out of their way, or get flattened!).

I appreciate that .... but I'm guessing an intermediate skier will not be skiing fast enough to really make the skis chatter thats a pros job, it could be more to do with the ski set up.

Yours edges, if not properly prepared can cause chattering.
