Forgot to mention that your expectation of off piste riding needs to be tempered by the fact that in early /mid jan the snow is likely to be dumping big style with the obvious implications on the stability of the snow pack.
Val Thorens is a good choice for plenty of snow and variety that the three valleys offers. However Val Thorens as a place to stay is a bit bland and can be quite noisy. You might want to consider Courchevel although still a purpose built resort I think it has a little more to offer.
Tignes is another good option with plenty of snow and scope for off piste riding. Early Jan and the resort still has all of the Christmas lights up so at night it looks great.

So, have we reached a consensus to the original question “Do Carvers Suck?� I would say carving skis are great. (I did resist using carving skis for sometime thinking that their forgiving nature would undermine my progress to perfecting technique) The problem is more to do with who is strapped to them!

I am inclined to agree with Dave that the plateau has moved up a point and that skiers probably do enjoy themselves more. However, what concerns me is the higher speeds and relative inexperience. I would like to see more emphasis on turn shape to improve enjoyment further and the ski way code and improve everyone’s safety.

I believe the name for the technique is 'pre-jumping' the objective is to maintain speed whilst minimising time and height taken in the air.
