Will be on my now regular, short, pre-Christmas "skiopening" trip to the Mittersill / Kitzbuhel area.

Interesting Billip - is there much snow in Kitz that early as its very low (by comparison to may of the early opening resorts)?

I go most years that week for a long weekend. It's a great time to ski as most of the resorts are empty.
Val Thoren, Tignes, alpe D' huez are all usually good that week. It's also pretty much the only week all season that accommodation is cheap and plentiful.
Book your flight now and wait to book accommodation until the very last minute and you will be fine.

When in doubt?....Flat out.

Try Cervinia if you are an early intermediate. Wide open slopes and nothing too challenging.
It's at 2000m too so snow sure and some great restaurants.
