I assume this is Feb half time next year, which would explain brochure prices.
Going under your own steam might be a better shout in that case. I assume you know how to source your own flights, but like Pablo said, it might be useful to have an idea more specifically of where you want to go.

Yes I did manage to think of that but so far I havn't found a single apartment free on that date and the prices in the brochures are just not funny.

I find it easiest to pick a general area first, then an airport/train station, and then find a good resort within an easy/cheap transfer distance. I have also found it cheapest to book self-catering accommodation with the relevant local tourist board or the local estate agency on the internet, but this seems to be unavailable to book until around July.
So, I would say the first thing you need to do is book plane/train tickets as soon as they are available.
This is what I am going to do, and I reckon the price per head will be about half what the major tour operators are charging for Feb half-term next year.

Thanks for the replies.
I did write the original message with a tiny amount of desparation which is why I didn't mention an area. We have been on our last four trips by organising it ourselves which we find cheaper and more fun, however this year I can't find an apartment available anywhere at all. We like the look of Val Gardena in Italy or Les Arcs in France.
