I'm looking for some destination options from Amsterdam from Sunday January the 18th and return on the 19th for some downhill skiing.

I'm willing to fly and save time to ski.

Recommendations? I've looked at Munich as a destination but the flight cost is too expensive and drive time is 7-8hrs each way.

Can you get reasonable flights to Geneva or Innsbruck? Both of those have a lot of resorts within an easy drive (1-2 hours). Currently, your best choices for snow are probably Austria unless you go high (so longer drives from GVA in general), but...

Keep a close eye on the forecasts; could be a fair amount of snow coming in this weekend which will be great for powder, not so great if you're relying on tight timings for your flights and drives...

200 euros on easyJet direct return to Geneva. "Cheap and expensive" are very relative terms, but I think if you are willing to travel just for a day of skiing and book at short notice, this is plenty cheap.

Winterburg is only a couple of hours down the road. Limited but it appears to be open https://www.j2ski.com/ski_resorts/Germany/Winterberg_webcams.html

I used to get Dortmund to Amsterdam in under 2 hours another 3/4 to Winterburg not to much of a problem as I used to get from Iserlohn to Winterburg in just over 1/2 hour. As the OP is only looking for a couple of days it might be an option.

Winterburg is too low for any decent skiing this season. Not worth the money IMHO. Amsterdam-Geneva-Chamonix is doable in just little bit over. Easybus now provides very cheap transfers from GVA to Chamonix too.

I agree it is very low and limited but the OP was only going for a day or two and at the moment it does have snow.

In the end you pay for what you get
