Have a week off at start of november. What are my options this early. I'm told stubai in austria is open year round. I'll probably take my car because I need to drive from UK to germany anyway - although not ruling out flying

I reckon your choices will be:
Zermatt/Cervinia
Saas-Fee
Les Diablerets (possibly)
Hintertux
Stubai
Tignes
L2A (possibly)
There may be more, some are date dependent. Enjoy :D

Not yet decided.
A couple of years ago we were at Brauneck Ski Tour Bavaria, Germany. It is a great place for skiing and hiking. I like it very much.

Hemsedal in Norway opens at the beginning of November (assuming they get the snow). The forecast is looking decent at the moment with snow coming from the weekend (they've struggled to open on time the last 2 or 3 seasons). Not the most challenging skiing although off piste is supposed to be decent.
slippy slidey snow......me likey!
